Why are smash burgers popular?

The Americans invented the hamburger, so it makes perfect sense its kin was created on the same lands. The smash burger gets its name from the technique used to create it, with the first smash burger in Kentucky some 60 years ago. A restaurant worker crushed a meat patty on the grill with a bean can to maximise the flavour of the meat. But it wasn't until a resturant called Jollibee opened and made the burger popular in 2007. And kinda died off until a few years ago when the griddle grills become popular. Then people starteed to make them and with socail media they became popular again .





So what is a smash burger anyway ?


Smashburgers start life as 3- to 4-ounce balls of ground meat, then get smashed flat onto a hot griddle. The resulting patty is thin and often imperfectly shaped, with edges all brown and crispy. Since most of the meat is pressed down onto the grill and browned, you're getting more Maillard goodness than when cooking a regular burger.Smashing the burger results in a sear on the outside of the meat, which locks in all of the juices and flavor. This method also helps to prevent flare-ups on the grill or griddle, as there is less surface area for the fat to drip onto the heat source.


You have to use minced beef with a good 20% fat content. That’s where your flavour is and that’s what is going to make your Smash Burger sing. Minced chuck steak is gold for Smash Burger.


Secondly, it’s the smash that really makes it. When you smash the burgers down on a super-hot grill, the fat has nowhere to go but back up into the burger patty meaning you’re essentially cooking your burger in its own beefy juices. If that concept alone doesn’t bring a dripping-glazed tear to your eye then I don’t know what will. Furthermore, the extreme heat and pressure supercharge the Maillard reaction, yielding the amazingly dark, crisp-crusted, flavour-packed patty that are the hallmarks of a true Smash Burger.
